Flamin' Shrimp

This is a very simple dish that can be an appetizer or entrée. 
1 celery stalk, diced
4 green onions, diced
1# medium shrimp, (31+ shrimp) peeled and deveined
1 jar Flamin’ Raspberry Preserves
Oil
Heat enough oil to cover the bottom of a skillet.
Add celery, garlic and onion.
Sauté until flavors are released about 2 minutes.
Add Flamin’ Raspberry Preserves to pan, heat until softened.
Add Shrimp.
Cook until shrimp turns pink. Serve with sauce from pan.

Note: I used a bag of frozen shrimp for a camping trip to make this dish as an appetizer. Open now thawed bag of shrimp. Leave shrimp in bag while you drain liquid. Add 1 tablespoon each of celery, garlic and onion salts to bag. Spread the seasoning around the shrimp. Set up double layer of aluminum foil to hold all ingredients. Spread Flamin’ Raspberry Preserves on the foil. Add shrimp mixture. Fold foil securely over the ingredients. Place in BBQ basket. Set basket over fire. Grill for about 4 – 8 minutes depending on heat from fire.
